This weekend we tried a new snack - baked garbanzo beans - and they were amazing! Mr. Jansson and I scarfed handfuls of these down while watching tv. I think I might be hooked. I added 6 cans of beans to my grocery list for this week. At 89 cents a can, garbanzo beans are an incredibly inexpensive, healthy snack. (They were also idiot proof to make.) Here's the recipe:
Ingredients:
Two 15oz cans of garbanzo beans
2 TBS olive oil
1 tsp paprika
1 tsp cumin
2-3 shakes of cayenne pepper
Kosher salt to taste
Heat your oven to 400 degrees. Open, drain, rinse and dry your beans. Then, place them in a large bowl and add in each of the above ingredients. Coat well. Next, pour your beans out onto an ungreased cookie sheet and place in the oven. After about 15 minutes gently shake your pan to move the beans around a bit. Let them cook an additional 15 to 20 minutes before removing them oven to enjoy!
