Meals from Home

When I was home over the Christmas holiday, I helped my mom organize a ton of recipes. Among them were family recipes written on note cards with others jotted down on post it notes, printer paper, and even more that were clipped from newspapers, magazines, can labels etc.

With so many delicious looking recipes, I took full advantage of the organizing session and took camera phone photos of recipes I wanted to keep/try. Over the next few months I'll be sharing these recipes as I make them for various occasions. (They'll be labeled "meals from home").
Last night we all got together for my father in law's birthday. I was on dessert duty and was told that he'd like a pie or cobbler. Since this week has been super busy/crazy I choose to fix a cranberry apple crisp recipe from my new "meals from home" stash. My mom used to make this dish and I knew it would be delicious, easy and fairly quick to make. (The most time consuming part is peeling and chopping the apples.) Without further adiou, here's the recipe:

Ingredients
3 cups of peeled, chopped apples (I used 7 big granny smith apples)
2 cups fresh cranberries (If you can't find fresh, you can substitute 1-1/2cups crasins)
2 Tbl flour
1 cup sugar
3 packages of instant oatmeal (cinnamon & spice flavor)
3/4 cups chopped pecans
1/2 cup flour
1/2 cup brown sugar (firmly packed)
1/2 cup butter (melted)
Directions
Preheat your oven to 350 degrees. Combine apples and cranberries with 2 Tbl of flour, tossing to coat. Add 1 cup of sugar and mix well. Place the mixture in a 2 qt casserole dish. (I used a 9 by 13 pyrex dish.) 

Combine oatmeal, pecans, 1/2 cup flour, brown sugar and butter. Stir well. Spoon evenly over the fruit mixture. Bake, uncovered, at 350 degrees for 45 minutes. You can garnish with pecans and cranberries if you'd like but I prefer it un-garnished with a large scoop of vanilla ice cream on top! (This should serve 8 people.) I hope you enjoy.
